Wynns Coonawarra Black Label Cabernet Sauvignon 2018
The colour is very deep, concentrated red/purple and the bouquet is a deep, brooding mix of blackberry violets, blueberry and blackcurrant. Perfect fruit ripeness. Oak is very background, and the palate is full-bodied and beautifully-structured, with the right amount of firmness in the tannins which run the full length of the palate and leave the finish cleansing and dry, the aftertaste refreshing and moreish. Warramunda Cabernets 2018
The wine celebrates the vineyards 20th anniversary and is a blend of Cabernet Sauvignon, Cabernet Franc and Petit Verdot. It is a wine that exudes class and has all the hallmarks to be a remarkable wine over the coming decades. Yarra Valley meets left Bank Bordeaux. The wine is a deep red in the glass, the nose opens with time after initially showing graphite and blackberry before subtle influence of dark chocolate, old leather and oak derived spice. The palate has a firm baseline of tannin and acid that is met in equal measure by drying dark fruits, tobacco and dark chocolate build on the mid palate with expressive blackberry and a weave of spice to finish. Houghton clone, Selectiv'-harvested or hand-picked and sorted, destemmed whole berries wild yeast-open fermented, 10 days on skins, matured for 13 months in French oak (33% new). Fragrant bouquet, fruit, oak and tannins all building a very, very impressive picture. Margaret River's climate is second to none. Flowstone Queen of the Earth Margaret River Cabernet Sauvignon 2015
Open-fermented, plunged three times daily, before 17 days on skins, 3 years in barrel plus another 15 months of settling prior to dispatch, the result is a lustrous cabernet. Crushed herb melds effortlessly with cassis, violet, gummy bear pastille, black olive and a swab of bay leaf tannins. There is so much glycerol, that it is already a nice drink. Perfumed and inviting. However, my suggestion is to test your patience, cellaring it for 8 years onwards.
