Now add this 100% varietal Rosé, mirroring the traditional styles of France's Rosé mecca, Provence. It's pale, glossy with white-topped strawberry crush aromas, leaf and spice and a faint dab of floral fragrance for a touch of glamour. From its (pale) copper colour to its strawberry-and-rust flavours to its grapey softness to the extra kick of both savouriness and fruitiness through the finish - everything is in tip top shape. Tahbilk Rosé 2025
Not your usual strawberries-and-cream rosé experience, although strawberries together with dark cherries and raspberries do figure here. No, this brings a little bit extra to the glass in bramble and hints of wild herbs together with peppery spice, musk and a touch of earthy savouriness. It's a strong combo, delivered briskly with lingering red cherry and stone-dry freshness. Dem Bones Bone Dry Rosé 2025
Younger drinkers have been spared the old fashioned Aussie Rosé’s – so many of which were clunky, cloying, about as far removed from balance as is imaginable and with an awkward sweetness. Thankfully, they have largely gone the way of the dinosaurs. Now we have fresh, energetic and dry wines, just like this. 100% Shiraz, this Rosé saw twenty-one days ferment. The colour here is a very gentle faded orange. The nose has a range of aromas, including herbs, florals, citrus, red fruits and a hint of salami. Rather juicy acidity helps keep everything rivetingly fresh. There are notes of blood orange on the palate and the wine has reasonable length. Enjoy for the next two to three years.
