40yo vines, crushed, open-fermented, 7 days on skins, matured in French oak (25% new) for 12 months, six gold medals, four trophies. A great example of hands-off winemaking, and of the very best of the Redman medium-bodied style. Cassis fruit, modest French oak and ripe but fine tannins are seamlessly woven together. The X-factor? Picked at perfect ripeness, down to the very days. If the wine had a screwcap it would be a 40-year proposition. Powerful, rich, concentrated, complex and - as is the wont of cabernet sauvignon - may bite you with tannins or some other painful lesson. Well, that doesn't apply here, because the wine has too much in its favour as it rolls out endless velvety carpets for your teeth to rest on. Rymill The Dark Horse Cabernet Sauvignon 2017
A bright ruby, this highly savoury cabernet promises from the get go with a nose that is nicely restrained rather than all show and go. The emphasis is on graphite, pencil lead and mineral. Cool. Suave. Impressive. Mid-weighted, little more. The fruit unravels with some air across the cheeks, showcasing cassis and cherry flecked with some gentle oak vanillin and mint.
