The Crayères vineyard is located at the top of a north-south limestone ridge in Wrattonbully, one of Australia’s most exciting regions. This vineyard has been baptised the Crayères Vineyard after the chalk cellars in Xavier’s region of birth in Champagne, France because of the natural limestone caves found underneath the vineyard.

Leafy and earth-driven, with aromas of red and black berries, tobacco, spices, saffron and citrus peel. The palate is mid-weighted with firmly framed yet integrated tannins and a crunchy, minerally, earth-driven finish. Nicely weighted with plenty of structure. Drink or hold. Screw cap. Raspberry and slightly earthy vegetal aromas; the palate shows good depth of medium-full bodied flavour backed with plenty of fine grained, powdery and drying tannins. The scent of Cab Franc is quite seductive: rose, rosehip, cinnamon, pepper, jalapeño and leaf with black cherry and plum. Rolling through and across the palate in plenty of ripe black fruit and spice with just a touch of savoury, roast meat juices.
