Grapes are dried for two months before pressing. The must is fermented and aged for at least 3 years in typical wood barrels called "caratelli". Fermentation is extremely long and slow and allow the wine to get its characteristic notes. Creamy, rich, sweet and fresh, with citrus and dried fruites notes. Honey dried fruit, figs with a spicy finish.
