Dave Fletcher is a very talented young winemaker with an extreme passion for Nebbiolo. He is sourcing fruit from carefully selected Vineyards both here and in Northern Italy with the sole intention of producing his own style of single Vineyard Nebbiolo. Dave respects the tradition of the variety but prefers to make his wines in a modern style with balance and fruit purity very high on his agenda. The Fletcher wines are an incredible study in the enigma that is the Nebbiolo grape. As Dave has spent more time in the vineyards of Piedmont his list of wines has grown too.
Nestled in the hills of Barbaresco, lies Pietro's Chardonnay vineyard. Driven with obsession and going against the grain, Pietro had the foresight to plant small acreage of Chardonnay on the northern slope of Cars Cru in Barbaresco and with in close proximity of the Tanaro river. The soils there are calcareous in nature.
The grapes are whole bunch pressed and the juice is settled naturally (without added enzymes or sulfur dioxide) for a period of 4 hours. It is then racked to French barriques of which 30% is new and the rest old. Alcoholic fermentation is completed in barrel with no added yeast. Dependant on the taste, the year and the acidity, the wine may be allowed to go through Malic fermentation. The wine will stay in barrique on fermentation lees for 8 months without battonage and racked only when it is time for bottling. The bottling is done without fining or filtration
