Hand-picked fruit was partially destemmed into small open fermenters, with 10% whole bunches included. After a 24-hour cold soak, fermentation began with gentle hand plunging of the cap, followed by an extended maceration under inert gas. The wine was basket pressed into a mix of new and seasoned French oak hogsheads, where it matured for nine months before bottling.
