Made with fruit hand-picked from 80-year-old bush vines that grow in terra rossa soil over limestone at a unique site in Leasingham. Our preference for this wine was to maintain some whole berries in the fermentation (to enhance aromaticity). The fruit wasn't crushed, but gently de-stemmed into small one- and two-tonne open fermenters with 10% whole bunches included for structure and complexity. Wild fermentation was used with gentle pigeage only, before basket pressing into seasoned oak hogsheads, where the wine matured for 6 months prior to racking and bottling without filtration.
