Hand-picked fruit, whole-bunch pressed, 50% wild-yeast fermented in 3000L French vat and puncheons for 10 months on lees. Creeps up on the palate with a hammer blow of grapefruits (yellow and pink), gritty acidity, Granny Smith apple and white peach all there.
