Dr. Edge is made by Peter Dredge. Cutting his teeth at Petaluma under the watchful gaze of Brian Croser, he was lured to Tasmania and now resides in Hobart, working with his own label (Dr. Edge) as well as stepping into winemaking duties at Meadowbank.

Dr Edge Tasmania Chardonnay is a blend of Tamar Valley (65%) & Derwent Valley (35%)  fruit. 

A blend of chardonnay from the Tamar and Derwent valleys, pressed to old oak, wild fermented and matured for nine months on lees, some casks with small amounts of whole clusters. Pale straw. Taut yet textured with a slinky array of white peach, lemon and grapefruit tones underlined with soft spice, roasting nuts, lemon curd, white flowers, stone and almond paste. Stony and composed with an umami-rich line of acidity and a real sense of harmony and composition as it slowly retreats with citrus and a wisp of oatmeal. White peach, lemon with honey and almond, a delicate fennel perfume, subtle cinnamon spice. It’s tight and tangy, a fine chalky texture with saline umami things happening, almost has a bag of white mushroom character (but don’t mind me), a lot of crunch and green apple, with a pure and long finish, and maybe some salted lime and goats cheese tang in the aftertaste.
