The Estate Grown wines from De Bortoli are sourced from their own vineyard at Dixons Creek in the northern section of the Yarra Valley. The grapes are picked from separate sites on the estate, with the first vines planted in 1971. This 200 ha vineyard is nestled into the western slopes facing mainly east and are carefully laid out to match variety and winestyle.

Fruit was hand harvested and hand sorted. A combination of whole bunch and whole berry is tipped into open fermenters. Some foot plunging at the beginning is followed by some remontage and plunging toward the end of ferment. Allowed 22 days of maceration and fermentation with wild yeast. Pressed, settled overnight and then filled to barrel via gravity. Allowed to mature for 13 months at 16°C in 500L and 2300L casks.
