One of the greatest domaines in Chablis founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

A deft application of wood frames the beautifully elegant nose of essence of pear, green apple, acacia blossom, lemon rind and a plethora of classic Chablis scents. The dense and unusually powerful large-scaled flavors don’t have the muscle of the Valmur but they’re
finer, all wrapped in a massively persistent and even more complex finale. As good as the Valmur is, and it’s wonderful, there is just a bit more here. Date: Oct 2022; Drink: 2033+; Issue: 88; Rating 93- 96 Points; Allen Meadows; Burghound

One of the domaine’s standout wines, this immediately strikes you with its precision and clarity. Fevre’s vines are from two different sites, with varying expositions - one lower down and facing south-east, the other high on the plateau. Great elegance with plenty of weight and concentration on the palate, full and fleshy. Grapefruit notes to the fore but plenty of mineral/saline notes on the long, persistent finish. A delicious, aristocratic grand cru. Fevre owns 2.5ha within Les Preuses. Date: Oct 2022; Drink: 2026-2034; Rating: 95 Points; Andy Howard MW;  Decanter
