The colour is very deep, concentrated red/purple and the bouquet is a deep, brooding mix of blackberry violets, blueberry and blackcurrant. Perfect fruit ripeness. Oak is very background, and the palate is full-bodied and beautifully-structured, with the right amount of firmness in the tannins which run the full length of the palate and leave the finish cleansing and dry, the aftertaste refreshing and moreish. Sourced from adjacent rows of 40-year-old vines hand-pruned to control the yield to 5t/ha. Cold maceration and pressed direct to oak for 18 months in French hogsheads. This is a seriously good cabernet from an excellent vintage. Its length is exceptional, as is its structure and slinky tannins, part fruit, part oak. De Iuliis Hilltops Cabernet Sauvignon 2021
Mike De Iuliis is understandably enraptured by the ‘pristine’ fruit of a wine that’s a ‘fantastic expression of cabernet’ with an ‘exceptionally fine tannin structure.’ He ran out of space to praise the glorious colour the wine has.
