The vineyards of Seville Estate are located in the cooler, southern regions of the Yarra Valley. Graham and Margaret Van Der Meulen purchased Seville Estate in December 2005, having followed their passion for cool climate wines. Their vision is to build on Seville’s reputation for excellence in production of boutique wines.
The Reserve range is estate grown and made, expressing the very best wines from a vintage and only released in exceptional years. The reserve wines are only produced in small quantities with fruit mainly sourced from our 1972 plantings. The wines are designed to have extended cellaring potential.
The colour is dark red with youthful purple tints evident. Perfumed with dark cherry, coco and spice, subtle oak sweetness adds lift and complexity. The palate is finely structured with ripe dusty tannins and red berry fruits. A tobacco savouriness that adds depth and complexity while the acid maintains freshness and adds brightness in the wine. A complex layered Cabernet that will award medium to long term ageing.
Winemaker Dylan McMahon can do no wrong. Yet another great with in the current release. It is the polished sterling silver that delineates the varietal cassis fruit, and the managing of the wine during fermentation, that simply nullifies any raw edge to young cabernet tannins found in otherwise fine wines.
