The vineyards of Seville Estate are located in the cooler, southern regions of the Yarra Valley. Graham and Margaret Van Der Meulen purchased Seville Estate in December 2005, having followed their passion for cool climate wines. Their vision is to build on Seville’s reputation for excellence in production of boutique wines.
The Estate range is made entirely from our own vineyards. The intention is to show the true expression of the site, using a combination of old vines planted in 1972 and our younger vines planted in 1996. All fruits are handpicked and sorted in the vineyard to preserve the best fruit quality.
The wine is pale yellow with a clear hue. Beautiful aromas of white flowers and stone fruits encased with a flinty lees reduction. The palate is focused and pure with bright melon fruits, sweet spice and a toasted almond oak complexity. The acidity is fine with a lime sorbet like flavour. An elegant and focused style that will age gracefully.
A wine of precision and thrillingly so with everything perfectly placed from the citrus and white stone fruit profile to the oak integration with ginger and wood spices. Finally the leesy flavours - adding a dash of creaminess to the palate plus there's exceptional length.
