Larry Cherubino has had a particularly distinguished winemaking career, first at Hardys Tintara, then Houghton, and thereafter as consultant/Flying Winemaker in Australia, NZ, South Africa, the US and Italy. He has developed three ranges: at the top is Cherubino; next The Yard, single vineyard wines from WA; and at the bottom the Ad Hoc label, all single region wines. The range and quality of his wines is extraordinary, the prices irresistible.
From vineyards in Wilyabrup, matured in French oak for 12 months. It ticks all the boxes with its cassis fruit on the one hand, firm cabernet tannins on the other providing all-up balance. Leafy cassis and blackcurrant hold hands with ripe raspberry and crushed black pepper. There is hints of liquorice and anise in there, too. At the price this is a ridiculously well structured, classically styled cabernet – I’m not sure what more you could possibly want. Supple. Succulent.
