Larry Cherubino has had a particularly distinguished winemaking career, first at Hardys Tintara, then Houghton, and thereafter as consultant/Flying Winemaker in Australia, NZ, South Africa, the US and Italy. He has developed three ranges: at the top is Cherubino; next The Yard, single vineyard wines from WA; and at the bottom the Ad Hoc label, all single region wines. The range and quality of his wines is extraordinary, the prices irresistible.
Sourced from several locations in the Great Southern, the fruit was fermented using a combination of wild fermentation and whole bunch pressing. It was matured in 1-3-year-old French oak casks for six months prior to bottling.
Leather and lipstick abound in this classy Pinot. The wine has a pale ruby/salmon hue and sweet clove and black cherry aromas. On the palate it’s all sweet spice, smoke, leather and black plum. All beautifully balanced.
