Jean Defaix inherited a fourth generation family estate and built an enviable reputation for top quality domaine-bottled Chablis. He has now handed over management of the estate to his equally able son-in-law Daniel Dampt. The house style remains as before : clean, ultra-pure, with bright steely acidity, and not so much as a hint of oak. Delicious when young, they can also age gracefully, as bottles from Jean's personal cellar testify.
There is enough post-bottling reduction to push the underlying fruit to the background. Otherwise the vibrant, delicious and attractively textured medium weight flavors possess an unusually sophisticated mouth feel, all wrapped in an impressively complex and persistent finish. This is an outstanding villages and very much worth your attention for its level.
