In Dreams aim  is to make wines that are an honest reflection of this stunning region, wines with elegance, restraint, complexity, and balance. The Chardonnay and Pinot blends are produced with fruit from the Full Moon Vineyard in the upper Yarra Valley - a stunning labour of love planted and meticulously cared for by vineyard owner Simon Hart. The cooler micro climates found in the upper Yarra help us capture the elegance and finesse of this noble variety. Focused on allowing the vineyards to express themselves in the resulting wines, and therefore have used traditional winemaking techniques such as small batch fermentation, wild yeast, and delicate use of French oak, in order to achieve this. 

Gentle, generous enough and vibrant drinking – the In Dreams Pinot got ‘bottle emptying’ all over it. Compelling in its feather touch red fruit. Not a lot of tannins, and indeed I almost bumped this up to gold medal, except that on day two it was looking a bit faded, which is a nod to the immediacy of the style. It gets the balance right between elegance/finesse and having enough flesh to satisfy. It just feels right. Strawberry and stewed cherry flavours with sweet spice, woodsmoke and (modest) deli meat. It’s lifted and perfumed, especially once it’s had a chance to breathe, and its fine-grained tannin too has been managed to perfection. So it sucks you straight in but it then has the structure and form to impress beyond the immediate. I’m scoring it 92, I could easily be 93, but my main ‘score’ is to recommend that at $32 this is a definite ‘buy’.
