Established in 1986 on the site of a dairy farm in north-east Tasmania, Clover Hill’s rich soil, natural sloping amphitheatre and maritime cool climate provide ideal conditions for the production of world class sparkling wines that rival the great houses of Champagne.

59/38/3% chardonnay/pinot noir/meunier, from Pipers River. Partial maturation in French oak foudres and barriques; matured on lees for 4+ years; 7.1g/L dosage; disgorged May 2021. Masterful winemaking trumps a tricky season. Partial foudre and barrel fermentation have delivered impressive texture that counters the natural phenolic mood of the vintage, playing the tension of cool Pipers River chardonnay to energise a long finish. It will appreciate cork age to build generosity and soften its bitter phenolic edge, and it possesses the stamina to go the distance. Drink to: 2031; Price: $50.00; Date Tasted: Sept 2021; Alcohol: 12%; Rating: 92 Points; Tyson Stelzer; James Halliday Wine Companion

On the palate this is equally vibrant, so taut, bright and zesty, there’s an element of infanticide with this one. I should not have awoken it from its slumber just yet, there is only a tiny hint of toastiness on the finish, it’s so young but already moreish. Tuck it away to really have the opportunity to revel in its gloriousness. great value. Tasted: Nov 2021 Alcohol: 12%; Price: $50; Closure: Diam; Drink: 2021-2035; Rated: 95 Points; Curly Haslam-Coates; The Wine Front
