Bollini has been the Empson proprietary brand since 1979. More than thirty years later, the concept is as avant-garde and fresh as when Neil and Maria first created the range. The Empsons’ goal in 2012, as in 1979, is to express excellence and consistency at accessible price points. The wines come from choice hillside locations in Trentino where a combination of high altitudes, a multitude of mesoclimates and night/day temperature extremes speak concentration and breeding.
Pinot Grigio exhibits traits seldom achieved at this level, with pear fruit, mineral notes and a creamy texture. The grapes are vinified and aged in stainless steel but, to engender further complexity and depth, the wine undergoes bâtonnage on the lees. It is the perfect aperitif white wine but matches well with all types of fish and shellfish.
