To this end, we search for the individual 'personalities' in every variety and vineyard, to craft wines which are unique, alluring and distinctively Tasmanian but never compromise on consistency or quality.
The Bay of Fires philosophy on Chardonnay production is to preserve to bottle the essential characteristics of the vineyard and fruit and create the highest quality blend from sub regional Tasmania. Gentle handling of the fruit and the wine helps to achieve this, while restrained winemaking assists in developing the complexity of the final blend.
Clones I10V5, P58 and B124, Selectiv'-harvested, pressed, barrel-fermented (36% new), matured for 9 months.
