A unique Australian style of wine that was designed to suit our warm climate. Sparkling Shiraz needs the rich and ripe fruit that our vineyards in Bendigo deliver to produce an intense and lush wine that is capable of aging. The nose is an intricate mix of blood plums, cassis, black currant, spice, chocolate and fruit cake with a generous palate and a touch of sweetness.
A warm spring led to good fruit set and healthy vines. The dry and warm weather through the growing season ensured that the fruit was in good condition with generous flavours when it was handpicked.
The fruit was hand harvested and fermented in open vats with daily hand plunging. A brief post fermentation maceration was carried out to enhance the integration of fine tannins. The wine was aged in a combination of seasoned French oak barrels and a 5% addition of base wine from the 2013 vintage was added for complexity.
