One of the greatest domaines in Chablis founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

Petit Chablis helps us to take a first step into the world of fine Chablis. William Fevre emanates fruity and floral bouquets that are marked by distinct mineral notes and great freshness. Hazelnut aromas, expressions of hay and of autumn, cheeky nuances of seaweed and bark, there is magic in the wine's ability to mate the disparate elements into a union which represents a character of its own. The flavours flow freely onto the palate, a wine of marvelous clarity and long dry fruit, depth and purity. Satiating flavours of flint and of minerals, flowers and pears, lean and crisp, decent fruit, spice and honey in a light bodied and lively wine, inimitably suited to the best seafood, especially oysters.

Petit Chablis is a perfect introduction to the world of Chablis’ fine wines. Its Portlandian subsoil differs somewhat from other AOCs in the region. However, it still evokes Chablis characteristics with lovely freshness on the palate. The 2015 vintage scored 90 Points with Tim Atkin MW

There is actually pretty good Chablis character to the nose of green fruit and citrus that precedes the attractively vibrant and intense flavors that possess fine volume while offering reasonably good persistence on the moderately dry and complex finale.
