One of the greatest domaines in Chablis founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.
Combining lovely fruitiness with an attractive freshness and characteristic minerality, Chablis is a wine region with global renown. Domaine William Fèvre’s vineyards sit on Kimmeridgian subsoil and enjoy ideal exposures for the production of a very fine wine. Very elegant bouquet, developing citrus, white-fleshed fruit and floral notes. Fresh and supple, the wine is marked by mineral notes that are typical of the appellation.
A cool, pure and slightly more elegant nose speaks of citrus, oyster shell, white flowers and iodine hints. There is excellent volume for a villages level wine with very good mid-palate concentration present on the medium-bodied flavors that conclude in a citrusy, clean and very dry finale. I very much like the delivery and this too will need at least a year or two of bottle age first. Recommended as overall, this delivers very fine quality.
