One of the greatest domaines in Chablis founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

The restrained and layered nose makes clear that this could be from nowhere else but Chablis with its aromas of algae, iodine, oyster shell and spiced pear. The texture of the medium weight flavors is also sleek and intense with slightly better density to the youthfully austere bitter lemon suffused finish. Lovely. One of the finest wines in the portfolio this year is the 2020 Chablis 1er Cru Vaulorent, a taut, youthfully reserved bottling of immense promise. Unwinding in the glass with aromas of citrus zest, beeswax, crisp white peach, white flowers, freshly baked bread and oyster shell, it’s medium to full-bodied, ample and seamless, with terrific tensioning intensity in a tightly wound format.
