One of the greatest domaines in Chablis founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

The 2015 Chablis 1er Cru Montmains, which comes from parcels located in Butteaux, FĂ´ret and Montmains itself, had a pleasant reductive note on the nose that did not seem to impede the terroir expression. The palate is taut and focused, fresh right from the start with a crisp line of acidity, full of energy and tension. Dare I say, this is more like a 2014 on the finish thanks to its tension. Here too there a whisper of exoticism to the peach, apricot, acacia blossom and ocean breeze scents. Otherwise there is good energy and detail to the elegantly textured middle weight flavors that exhibit just a bit more minerality and depth on the refreshing and lemony finale.
