Parcels of fruit, primarily from the Great Southern, were harvested at night at desired flavour ripeness. Only free run juice was used for this blend and the slow, cool ferments were closely monitored over the 14-day duration. This achieved the preservation of the intense aromas and varietal flavours . After fermentation, final blending produced an aromatic and complex wine, bottled early to maintain freshness.
Pale straw with brilliant clarity and a green tint. A lifted nose of subtle tropical notes with gooseberry and herbaceous characters. Light and zesty characters of citrus and passionfruit balanced with green peas and fresh herbs. The acid is lingering on the finish with a persistence of flavour.
