Sticks acquired the former Yarra Ridge 3000-tonne capacity winery in 2005, and 24ha of estate vineyards, mainly planted in 1983. The estate production is significantly supplemented by contract-grown grapes sourced elsewhere in the Yarra Valley and surrounding regions. Grapes were harvested from our estate blocks and Upper Ngumby vineyard, both situated along the foot of the Christmas Hills range. Whole bunch pressed, the fruit released its free draining juice that was collected in tank, which minimised contact with the berry skins and phenolic pickup in the majority of the juice.

After pressing, and a 24 hour coarse settling, the juice was racked into ferment in new and seasoned French oak hogsheads (300 L) and puncheons (500 L) and temperature controlled tanks. The solids included in fermentation contributed to the complexity and savoury notes found on the palate. Post fermentation all the wine batches are aged on lees for approximately 9 months. Following a rigorous selection process, the Sticks Chardonnay is blended and prepared for bottling for you to enjoy!
