Established in 1851, Seppeltsfield houses Australia's greatest collection of fortified wines dating back to 1878. At the cornerstone of this group is the unique Para Centenary Tawny collection with consecutive vintages going back to 1878. We believe Seppeltsfield is the only winery in the world to release a 100 year old wine each year. The Seppeltsfield fortified wine portfolio incorporates a wide range of styles including sherry, muscat and tokay as well as port style wines.
Seppeltsfield's DP117 is crafted using the Palomino variety, renown for its neutral flavour profile and suitability to dry Apera styles. Seppeltsfield produces small parcels of DP117 each year, to then be added to our Solero nurseries for aging and blending. With the influence of Flor yeast formation, DP117 is characterised by its bone-dry palate and distinctive aldehyde notes.
The Seppeltsfield Solero Collection is inspired by the traditional Spanish and Portuguese fractional blending method of aging wines. This system delivers high quality and style consistency by blending younger wines into old. After utilising only the very first cut of free-run juice and fortification with a neutral spirit, the DP117 Pale Dry Flor is matured in our Solero nurseries to an average age of 7 years. Seppeltsfield's historic Solero nurseries are identifiable by the carefully stacked barrels in which they gracefully mature.
