Established in 1851, Seppeltsfield houses Australia's greatest collection of fortified wines dating back to 1878. At the cornerstone of this group is the unique Para Centenary Tawny collection with consecutive vintages going back to 1878. We believe Seppeltsfield is the only winery in the world to release a 100 year old wine each year. The Seppeltsfield fortified wine portfolio incorporates a wide range of styles including sherry, muscat and tokay as well as port style wines.
Seppeltsfield's DP116 is crafted using the Palomino variety, renown for its neutral flavour profile and suitability to dry Apera styles. The DP116 is similar to the DP117 dry flor, where a layer of yeast (flor) adds palate complexity in the form of aldehydic characters. This layer of flor however is later removed with the DP116, prompting oxidative maturation and the development of subtle nutty flavours.
