    Hillcrest Estate Cabernet Sauvignon 2005

    Hillcrest Estate Cabernet Sauvignon 2005

Yarra Valley Cabernet has taken a back seat over the last few years to the more fashionable, and mildly more successful Burgundian varieties of Pinot Noir and Chardonnay but just a whiff of this wine takes one back, not so long ago, when this variety was king. It is great to see such quality can still be had for a reasonable amount of money despite that fact that literally only a few barrels of this wine exist. Tobacco leaf, cassis and blackcurrant are the hallmarks, get some air into this if enjoying in the short term otherwise sit on it for 5. Drink: Now - 2014; Quality: Excellent; BW, WineStar© 2007

Aromas of blackcurrant, dark cherry, black olive, licorice, a flicker of capsicum and light pencilly oak. On the medium bodied palate there are flavours of dark cherry, blackcurrant, cigar box and black olives. Layers of sweet and savoury built on a web of strong fine silky tannins and glistening acidity. Poised and perfectly balanced with a long black olive and blackcurrant aftertaste. An outstanding wine that encourages the next glass. Alcohol : 13.4%; Drink : 2007 - 2016; Rated : 94 Points; Gary Walsh; Winorama

Aromatic, stylish and a wonderful expression of pure Cabernet on the nose. A deep, rich, expressive wine, great length, balanced natural acid, fine tannin. A beauty. 2009-2020+. Hillcrest
