Grapes were harvested at optimal maturity, de-stemmed and put to small open fermenters. After daily plunging and an extended maceration, the ferment was pressed off to fine French oak to undergo malolactic. The wine was then racked several times and given a light egg white fine before final filtration and bottling. Alcohol 13.7%
