Bin 707 is the Cabernet Sauvignon equivalent to Grange, a wine of ripe and intensely-flavoured fruit, treated to new American oak, and fully expressive of the Penfolds understanding of multi-vineyard assemblage. Named by a Qantas marketing guru, Bin 707 was first vintaged in 1964, and was not made from 1970 to 1975 (when the focus shifted to Bin 389) nor in 1981, 1995, 2000 or 2003 (when fruit of the required style and quality was not available). Full-bodied and with proven cellaring potential, Bin 707 is arguably Australia's finest Cabernet.
Deep, dark red, the wine has an extremely complex and varietally expressive bouquet, its fragrant scents having a pinot noir-like allure, drawing you back repeatedly. The blackcurrant and cassis palate is a seamless extension of the bouquet, with extreme length and such impeccable balance it hovers on the edge of outright elegance. The 2008, based on Coonawarra, Barossa and Wrattonbully cabernet, is glass-staining and full of essence, driven by concentrated plum and blackberry-like fruit, plenty of sweet oak and a whisper of leafy, blackcurrant background austerity. A gorgeously perfumed, generously proportioned wine with a strong Coonawarra accent! Deep colour, fresh blackcurrant/ mulberry/ espresso/ sage aromas with underlying vanilla/ nutmeg oak. The palate is rich, substantial and velvety with smooth blackcurrant/ mocha flavours, integrated spicy new oak and plentiful/supple tannins. It finishes long and fruit sweet with a long tannin plume. Bin 707 is simply Grange made of cabernet sauvignon instead of shiraz. It’s about power, flavour concentration, American oak and longevity. Originally sourced from Block 42 of the Kalimna Vineyard, northern Barossa, it now owes more to Coonawarra, hundreds of kilometres to the south – although the Barossa contributes in this vintage. The 2008 is another beautifully balanced blockbuster – impressively aromatic, revealing floral character as well as deep, underlying cassis-like varietal notes, with a mere hint of leaf. The palate’s impressively concentrated, the flavours reflecting the aroma – though over time the lovely cassis-like character dominates. The fruit is layered with powerful but fine, silky tannins, with the oak almost impossible to separate from the fruit flavours. Chris Shanahan
