    Chapel Hill Cabernet Sauvignon 2006

    Chapel Hill is piously crafted to showcase the attractive and distinctive attributes of fine Mclaren Vale Cabernet. Sourcing fruit from carefully husbanded vineyards ensures consistency, as it articulates the richness and diverse flavour spectrum of McLaren Vale fruit.

    Chapel Hill expresses the affability and charm of the finest McLaren Vale Cabernet. With such a close proximity to the Gulf of St Vincent, and the cooling afternoon sea breezes she provides, the grapes do not ripen too quickly. Flavours, colours and tannins develop slowly, and to the very fullest. Cabernet grapes grown here are bursting with natural fruit sugars and exhibit excellent varietal definition.

    Deep crimson colour. Aromas of intense violet, cedar and chocolate, a background of mint and turkish delight, awe inspiring complexity, aromatic and persistent. This wine exudes an evocative array of characters, blackcurrant and beetroot, cloves and roasted chestnut flavours all mingle harmoniously within the wine, the middle palate is augmented by seamless, subtle influences of oak. Sweet fruit still dominates the palate after an extended oak maturation, the flavour profile is underpinned by the subtle and seamless integration of the spicey oak and the sumptuous finely grained tannin structure.

    There are some leafy, almost vegetal aspects to this wine but the more I look at it the more I like it. Lovely cabernet really. It tastes of chocolate, mint, blackberry and cedarwood, the texture smooth and the vigour of the flavours quite excellent. For such a flavoursome wine it’s remarkably refreshing, and downright bonza value. It drinks nicely now, but it will cellar.
