The Marchand & Burch Chardonnay is traditionally sourced from two of the oldest vineyard plantings in the Porongurup sub-region of the Great Southern. This region takes in name form the ancient, granitic bolder-like landform that rises from the surrounding landscape. Each vineyard sits high on opposing shoulders of this volcanic outcrop, in soils formed by the weathering of the softer rocks surrounding the range.  The vineyards are planted to the Gin Gin clone of Chardonnay and as such yields are typically low and berry size irregular.

Hand-picked and sorted batches from each vineyard, cooled, whole bunch-pressed, wild-fermented in all sizes of French oak (40% new), a portion of each batch undergoing mlf, matured for 9 months with continuous lees stirring until dry. The weight and balance of the wine have been precisely calibrated, opening with a floral bouquet leading into an assemblage of citrus (grapefruit), stone fruit (nectarine) and melon, oak providing a tattoo of grilled nuts.
