The Le Chat Noir wines are sourced from the Aude Valley, located in the foothills of the Pyrenees south of the famed walled hillside town of Carcassonne. Rising to an altitude of 450 metres, the terraced, low yielding vineyards are cooled by refreshing winds and chilly nights, creating elegant and varietally expressive wines.
Not your average Sauvignon Blanc, this wine balances the intense fruits of many New Zealand wines with the restrained mineral acidity of the traditional French style. Sourced from the cool climate Aude Valley in the south of France, the wine retains its varietal character, acidity and freshness.
2015 was a somewhat challenging vintage that rewarded the diligent vigneron and brave winemaker. Unsettled, wet and cool conditions persisted through summer and autumn placing great responsibility on the vigneron to closely manage the vineyards. The cool vintage and late harvest suited Sauvignon Blanc as it was allowed to mature slowly whilst maintaining lifted aromatics and natural acidity.
The nose is very fresh and somewhat restrained, offering subtle apple, grass and light tropical fruit aromas. The palate is elegant and delicate with lime, citrus and passionfruitflavours flowing to slate and mineral finish. The quality of the vintage shines through in the wine’s delicate varietal expression and pristine acid backbone.
