The Carillon family domain has a surface of 11ha, through ‘Louis Carillon and Sons’, created in 1981. At present Jacques and François Carillon are the joint managers. The domaine ‘Francois-Carillon’ is the legacy of the Carillon family. Established in Puligny-Montrachet in the sixteenth century. The logo currently in use was found on an engraved stone in 1632 in a cave of the village. The wines of Carillon are regarded in the elite of the great white wines of Burgundy. Celebrated by critics and found on the map of prestigious restaurants around the world, Domaine Carillon produces white wines that are racy, elegant, fruity while embodying perfectly the terroir of Chardonnay.

The 2015 Chassagne-Montrachet 1er Cru les Macherelles, matured in 20% new oak, has a tightly-wound, slightly chalky, Puligny-like bouquet that just needs to develop more intensity during its élevage. The palate has good attack on the entry with a pinch of white pepper, crisp acidity with a linear finish that just misses a little persistence. Otherwise, I appreciate the wound-up energy Jean-Jacques has instilled into this wine, although the 2014 clearly possesses more nerve. Drink 2018-2027; Rating: 88-90 Points; Neal Martin; Robert Parker The Wine Advocate

Here too there is a subtle whiff of wood present on the pear, resin and petrol-suffused nose. There is once again good energy to the bigger and richer medium-bodied flavors that coat the palate with dry extract, all wrapped in a relatively dry finale. This should drink well young and with a few years of aging. Tasted: Jun 2017; Drink: 2021+; Issue: 67; Rating 89-91 Points; Allen Meadows; Burghound
