The latest incarnation of Rococo represents great value Yarra Valley fizz of impressive finesse and tension, with well balanced dosage and nuances of fine, mineral mouth feel. Sourced from several Yarra Valley vineyards, base wines are fermented mainly in older casks and given lees contact for texture and softness. For all this activity, it retains a zesty and lively style, driven by lemon, apple and pear fruit, with gentle texture and spicy complexity of barrel fermentation. Bright straw-green; a blend of vintages from several Yarra Valley vineyards, the base wines fermented and matured in old oak casks and given extended lees contact prior to tirage. Made from older vintage wines, blended together, with oak ageing, too, to give it depth of flavour and added class, Rococo is a heady, exotic sparkler with a mouth-filling flavour and a distinguished air. This good-value bubbly is light gold in the glass and brings forth busy medium-fine bubbles. The nose has marzipan and melon scents and grape fruit flavour zips in on the front of the palate.
