Hand crafted, single vineyard, grower style - for an Australian sparkling wine it certainly sounds interesting. Este is a unique sparkling wine sourced entirely from vineyards in the upper Yarra Valley and made in the true 'm├ęthode champenoise' style. The blend of Pinot Noir and Chardonnay is 100% barrel fermented 'au sauvage' (using wild yeasts), has undergone full malolactic fermentation plus secondary fermentation in bottle, hand riddled and is finished in ZD style - that is zero dosage. Artisan in approach and edgy in style.

Pale straw in hue, this is an elegantly restrained and subtle Yarra Valley sparkling. 6 years of lees age creates a beautifully textured and creamy style, with rising ginger cake, nougat, honey and mixed spice orbiting a focused core of lemon and beurre bosc pear. Sustained by seamlessly integrated acidity, balanced dosage and great persistence, it has the potential for further improvement over some years yet. Disgorged Nov '14.
