Hand crafted, single vineyard, grower style - for an Australian sparkling wine it certainly sounds interesting. Este is a unique sparkling wine sourced entirely from vineyards in the upper Yarra Valley and made in the true 'méthode champenoise' style. The blend of Pinot Noir and Chardonnay is 100% barrel fermented 'au sauvage' (using wild yeasts), has undergone full malolactic fermentation plus secondary fermentation in bottle, hand riddled and is finished in ZD style - that is zero dosage. Artisan in approach and edgy in style.
It’s such a rich, powerful sparkling style. Impact is the word. Rich, toasty, lots of strawberry and rose petal, red apple skins. Big flavour and personality. Love the way this is going. Probably less obvious oak than the 2006 but there’s still oak here. Impressive sparkling wine from all angles.
