Rated by many judges as the greatest Alsace Riesling of all, Clos Sainte Hune comes from an exceptional 1.3 hectare plot near Hunawihr. Of great longevity and very rare (production rarely exceeds 7000 bottles), Clos Sainte Hune takes at least seven years to reach its peak. The wine is vinified to complete dryness leaving no residual sugar. Fermented in stainless steel vats with no oak aging. To insure that the maximum flavor of the grape comes through, there is no malolactic fermentation. Bottling is early to preserve freshness. This classic wine is dry yet succulent, and attains phenomenal complexity with age. Clos Sainte Hune develops an extraordinary aftertaste of minerals after a few years in the bottle. The "classic" bottling of Trimbach's 2007 Gewurztraminer is scented with sweet pea, cinnamon, nutmeg, litchi, celery seed, Thai basil, and rose petal, its floral and herbal characteristics emerging to especially lovely inner-mouth prominence. In keeping with the entire vintage at this address, we have here refreshment that is uncommon in Gewurztraminer, especially in one that tastes dry, though the finish is less interesting than the nose led me to hope.
